Quick n Simple Lunches
Do you struggle with what to prep for lunch? Are you running around like a mad woman/man every morning trying to get everything done and then lunch goes out the window and you have another day of "takeaway".
That has been me of late ... so I am back to work on Monday and have been researching what am I going to do and how can I do it better. So I stumbled across Mason Jar Salads ... they are not a new thing, but they are a new thing for me ;).
I am off to buy some wide mouth Mason Jars 32oz / 946ml (is what they are saying is best size to use.
How does this look you say ...

How to layer the perfect mason jar salad
Start with the dressing and wet items
Add moisture resistant veggies
Add Pasta / Rice / Grains
Protein of choice
Last but not least your greens and crunchy items

Here is one recipe I am trying for next week:
Rainbow Quinoa Salad (serves 4)
2 cups cooked quinoa (red, white, mixed whatever your preference
2 cups chopped fresh beets (I will give these a quick chop in the Thermomix)
1 cup pomegranate arils
120 grams goat cheese chopped
8 tablespoons (1/2 cup) crushed or chopped pistachios
2 cups chopped Diced Green apples
2 cups chopped fresh baby spinach
a handful of red onions or fresh herbs if you want
Balsamic Dressing (I love the praise Deli Style) - whatever dressing you like (make your own or store bought)
Now to Layer each Mason Jar
20ml dressing of choice (you might like a little more or less depending on your tastebuds)
1/4 cup of beets
1/4 cup cooked quinoa
1/4 cup Pomegranate arils
30 grams goat cheese
2 tablespoons of crushes or chopped pistachios
1/2 cup chopped apples
Red Onion / Herbs to taste
1/2 cup spinach
I will also be taking my protein of choice each day - depending on what I have cooked the evening before for dinner (steamed chicken, tuna, smoked salmon, mixed beans) - these are stored in little mini mason jars to keep them fresh).
